PIÑA COLADA VEGAN SMOOTHIE

Omg you guys this is actually amazing!! I’m getting a little bit sick of chocolate protein as I’ve had a bit of an overload the past few months, so this is a refreshing change away from the standard ‘berries, spinach and chocolate’ smoothies.
A delicious, protein and healthy fat packed smoothie perfect for breakfast or a snack!

INGREDIENTS:
4 tablespoons of dessicated coconut

BREAKFAST MUFFINS

My work/life balance has been WAY out of whack lately, so I’ve had to focus a lot on food prep on the weekends to make sure I’m making the best food choices I can, quickly, during the week!

I’m not normally one to promote packaged and processed foods, but I think Sarah Wilson’s I Quit Sugar range at  Coles and Woolworths does a pretty good job of cutting out preservatives and additives and it’s a really good option if you’re on the run.  (more…)

GLOWING GREEN

I’ve stumbled across a few amazing Podcasts in the last 6 months. I’m really into Podcasts as I commute an hour to and from work every day, and I find it a really easy way to soak in some extra Health & Fitness knowledge without having to be in a class! Plus, I feel like I’m actually doing something interesting with my commute and using my brain!

CHOC-PROTEIN VEGAN PANCAKES

Continuing on my Candida diet, I wanted to treat myself over the weekend after sticking to it alllllll week! So, I got to researching and edited a few healthy protein pancake recipes I came across to suit the Candida requirements. I do have to say, I think the cinnamon was a game-changer!

CHOC-FRENCH TOAST

A yummy, easy and healthy version of a weekend breakfast in bed fave!

INGREDIENTS:
2 eggs
1/2 cup almond & coconut milk (or milk of your choice)
1/2 teaspoon vanilla essence
Pinch of cinnamon to taste
2 slices organic sourdough (I have just found Bills brand bread & fruit loaf and I am in love! I am Gluten intolerant, but find I can tolerate this bread in small amounts)   (more…)

SHAKSHUKA

Breakfast for dinner? Well, eggs anyway. Super easy, healthy breakfast, lunch or dinner! My version of the classic Middle Eastern spicy eggs

INGREDIENTS

  • 1 tblsp Olive oil
  • 1 red onion, chopped
  • 1 capsicum (pepper), sliced
  • 3 cloves garlic, crushed

SMOOTHIE BOWLS

I have a new obsession…smoothies in a bowl.

They are popping up everywhere. Check out your local healthy cafe and they are sure to have an assortment of flavours. They are SO easy. Here is my fav recipe at the moment:

Berry Protein Smoothie Bowl:
1 frozen banana
1 -2 cups frozen berries
1/2 cup milk of your choice. I use almond & coconut
Scoop of vanilla protein powder
1 tblsp BSC greens powder (if desired)

Put all above ingredients into a blender or thermomix and blend until smooth. I do 45 seconds on speed 10 in the thermo. If it’s still a little lumpy I scrape down and repeat for another 45 seconds

Then top with whatever you like! I like to use strawberries, a sprinkle of oats or granola/muesli (try my apple & cinnamon quinoa deeeelish granola here), almonds, chia seeds and coconut.

G R E E N

I’ve recently purchased Sally Obermeder’s Super Green Smoothie book as I found I was in a bit of a ‘smoothie rut’ and got in the habit of making the same smoothie every morning. It’s given me lots of new inspiration & flavour ideas and I was bursting to try out a smoothie in my new Thermomix!

I buy a bunch of bananas and kale at the start of the week and separate them into zip lock bags and pop them in the freezer so they are ready to go in the mornings!

This particular mix is:
1 frozen banana
1 cup frozen kale or baby spinach
1 cup mango (fresh or frozen)
1 cup almond & coconut milk
1 tablespoon chia seeds
Honey to taste (you can use Stevia, coconut sugar or Agave if you would like a Vegan option)

Put everything in the Thermomix and blend on speed 10 for 2 mins. SO smooth & creamy! And if you are using a normal blender, blend kale and almond milk first for 1 minute on the lowest setting, then add all other ingredients and blend on the highest setting for another 2 minutes.

Let me start off by saying THIS IS THE MOST AMAZING HEALTHY BREAKFAST (OR DESSERT) YOU ARE EVER GOING TO EAT!!

One of my friends has been diagnosed with Coeliac recently, and her Mum has just found out she has IBS. Obviously, 2 terrible things to have to deal with…but also on the positive side, a good thing for me because they are finding all of these new, healthy recipes!
Nat knows I have a huuuge sweet tooth, so when I went to visit last week she made me try her newest creation. Let me tell you…it was like a party in my mouth. Smooth like cream, sweet like ice cream – I died and went to health food heaven. I asked her how she made it & came home to do a little research myself. It turns out this dish is actually Vegan friendly too.

So…all you need is a can of Coconut Cream (not the light version or it won’t whip), a dash of natural maple suryp, some Stevia if you want to add it in, chia seeds, a mixer and your choice of fruit and nuts!

The day before you want to eat it:
Keep the coconut cream in the fridge for a few hours
Pour into a bowl and whip for a few minutes
Add in a dash of maple suryp and a teaspoon of stevia. Whip again for a few minutes.
Add a tablespoon or 2 of chia seeds and mix them through
Refrigerate overnight
The next morning ‘TADAAA!’ you now have fluffy, delicious, healthy cream ready to add to your oats, berries and nuts!

THERMOMIX version: Once the cream has chilled, add the coconut cream to the mixing bowl. Insert the butterfly and slowly increas to speed 3.5 and whip for 1 minute. Add any extra ingredients and whip again for 20 seconds on speed 3.5

I could actually eat this every meal of every day and not get sick of it…it’s amazing!
