DAIRY FREE, GLUTEN FREE CARBONARA PASTA

My version of a deeeelish carbonara pasta packed with protein from the chicken and quinoa pasta and also a wholeee sneaky bag of baby spinach (that I mix through and trick my boyfriend into eating hehehe)
Oh, and the best bit…it literally takes 15-20 mins depending on how quickly your pasta & chicken cooks!

INGREDIENTS:
Your desired serving of gluten free pasta (I use Orgran brand from Coles or your local Organic shop)
2 tablespoons coconut oil
1-2 teaspoons crushed garlic
1 brown onion, diced
500g organic grass fed chicken breast, diced
6 slices of bacon, diced or sliced
3 handfuls of chopped mushrooms
1 packet of cherry tomatoes, cut into halves
1 bag of baby spinach
3/4 of a can organic coconut cream (I use the Ayam brand from Coles)

METHOD:
Boil water in a Β large saucepan and cook your desired amount of pasta
While pasta is cooking, heat your coconut oil and garlic over medium heat until garlic has browned and has flavoured the oil
Add chopped brown onion to the oil and sautee for 2 mins
Add chicken breast, stirring occasionally until browned (approx. 10 mins)
Add bacon and brown for 3 mins
Add mushrooms and tomatoes and sautee for 3 mins or until mushrooms are wilting
Once your chicken, bacon, mushrooms and tomatoes are cooked you pasta should also be ready! Drain your pasta and put back into the large saucepan on low heat
Add all items in the frypan into the pasta and mix through
Pour 3/4 the can of coconut cream into the pasta and stir for 20 seconds
Add the bag of baby spinach, stir through and place lid on for a few minutes to wilt the spinach
Give one final stir through once spinach is wilted and your dish is ready to serve!!

NOTES & ALTERNATIVES:
My boyfriend NEVER ate vegetables (especially spinach) before we met and this is his absolute favourite dinner of mine to request. He says you can’t even taste the spinach, so it could be a hit with the kids as well!

To make this a vegan dish, you can omit the bacon and use tofu instead of chicken

If you are cutting back on carbs, you can use zucchini noodles instead of pasta. Just make the zoodles, fry them for a few minutes in a fry pan with some coconut oil and stir them through the chicken & vegetables mixture once done. Zoodles only take a few minutes to cook through.
