LEMON COCONUT MILKSHAKE PROTEIN BALLS

These are SO amazing and literally smelt like a vanilla/coconut milkshake when I was making them…I had to hold myself back from eating all of the mixture!! Plus, they are plant based, gluten free, dairy free, soy free, sugar free and if you want to make them nut free you could substitute the almond meal for coconut flour or gluten free oats! 

INGREDIENTS

  • 1 cup almond meal
  • 1 sachet of Arbonne vanilla shake – purchase here (I think this is the secret ingredient!! It does have some cane sugar, but it is a pea protein powder with SO many vitamins and minerals added in – I feel it’s better to have a little natural sugar rather than adding in artificial sweeteners that are now knows carcinogens to the body, and also cause blood sugar spikes and sugar cravings)
  • 1 tablespoon chia seeds
  • 2 cups desiccated coconut
  • Zest and juice from 2 large lemons
  • 3 tablespoons coconut oil
  • 1 tsp vanilla extract

DIRECTIONS

  1. Add all ingredients into your Thermomix. Mix on speed 3 for 20 seconds
  2. Depending on your desired consistency, scrape the bowl down and mix again on speed 3.5 adding in a tablespoon or 2 of hot water if you wish
  3. Roll into balls – I use a dessert spoon to scoop out to they are all the same size. And toss with coconut to cover

If you don’t have Arbonne vanilla powder, any vanilla protein powder will be fine, just add 2 scoops of you favourite. Depending on your desired taste, maybe add in another teaspoon of vanilla extract or a tablespoon of pure maple syrup if using your own protein powder
