CHOC-PROTEIN VEGAN PANCAKES

Continuing on my Candida diet, I wanted to treat myself over the weekend after sticking to it alllllll week! So, I got to researching and edited a few healthy protein pancake recipes I came across to suit the Candida requirements. I do have to say, I think the cinnamon was a game-changer!

INGREDIENTS:
4 tbsp coconut flour
2 tbspn vegan Arbonne protein powder (purchase from the lovely Kristin, here) – it’s up to you what flavour you choose, I went with vanilla for this batch
2 tbspn organic cacao powder
1 tbsp chia seeds
1 tbsp flax seeds, ground
1 tsp cinnamon
1/4 tsp baking powder
1 egg (or 100g no sugar added apple sauce if you want a vegan option. Green apples are the lowest fruit in sugar, so are allowed on the Candida diet. Alternatively, you can make your chia seeds from above into a chia egg)
1 tbspn Mayvers choc-almond spread
10 tbspn almond milk – or more, depends on your desired consistency
1 tbspn coconut oil, melted
1 tspn vanilla extract
1 tspn stevia

METHOD:
All all ingredients into the Thermomix and mix on speed 3 for 30 seconds. Scrape down sides if needed and repeat, adding in extra almond milk if you want them to be runnier.

If you don’t have a Thermo, add all ingredients into a bowl and beat/whisk until combined.

I find pancakes are a bit of a personal thing when it comes to consistency, and also the fry pan you are using. If it tends to stick, I like to make my mixture a bit runnier. Coconut flour is very dense, if the mixture isn’t runny enough the pancakes will stick & turn into a crumbly mess (yes, this happened to me my first batch!) I knew I had the ingredients right because the mixture tasted delish, so just add in more milk if needed.

I used Nudie Coconut Yoghurt in between my stack and topped with 3/4 cup of blueberries stewed on a low heat for 15 minutes with water & 1 tspn of stevia, a handful of almonds, shaved coconut and Mayvers choc-almond spread
SO yum!

Note – if you aren’t following a low sugar or Candida diet, you can add in a full ripe mashed banana to help with consistency
