I’ve been trying to mix up my lunches at work so I don’t get bored and spend way too much money on over-priced and over-processed salads. I used to love wraps before I found out I was gluten intolerant and I really haven’t found a gluten-free wrap brand that I like that’s not too processed and doesn’t have too much added sugar, so I’ve been substituting with cos-lettuce leaves! Yum! (And no carbs!)

Here’s a yummy option that’s nice and high in protein, healthy fats and pro-biotics so we are keeping out gut healthy

I cooked up 500g of chicken strips with the juice of a lemon, a sprinkle of salt and pepper and half a teaspoon on garlic.

I take the chicken in to work and add a teaspoon of chicken and Peace Love and Vegetables super-kraut, some quinoa, a slice of tomato and avocado. So easy!!
