ROCKY ROAD

Ok, so this one isn’t gluten or dairy free but it is is freaking amazeballs and deserves a mention. If you’re only intolerant like me and not fully Coeliac then this is a go-to naughty treat!

 Ingredients:
2x200g blocks Cadbury dairy milk (or chocolate of choice)
Packet of marshmallows
200g packet of raspberries
300g clinkers
1/2 bag of M&Ms
You really can add in anything you like! Shredded coconut, malteasers, nuts, rice puffs, mixed lollies etc. and the measurements of this recipe don’t need to be exact. If you find you have added too many mix-ins just add in a tablespoon or 2 of coconut oil or a splash of water

Method:
Roughly break up chocolate blocks and put into thermomix bowl speed 10 for 10 seconds. Scrape down sides and repeat speed 10 for 10 seconds
Melt chocolate for 5 mins, heat 50, speed 1
Add in mix-ins and put in reverse, speed 1 for 1 minute. If there are too many mix-ins and it’s not turning properly add in a splash of water or coconut oil. Once mixed spoon into a laming ton tray and put in the fridge to set for an hour. You can leave it in the fridge or if your mix-ins are too hard when they are cold, store in a jar
