Look no further for a delicious, fluffy and creamy alternative to mashed potato. A healthy, lower carb, Paleo and Vegan option!
Ingredients:
800g cauliflower roughly chopped
200g leek roughly chopped
1 cup coconut cream
100g Nuttelex (or coconut oil)
2 tsp garlic powder
Pepper to taste
Method:
Put cauliflower and leek into the Thermomix and chop on speed 8 for 15 seconds
Add remaining ingredients and cook on speed 1, Varoma temperature for 20 mins
Blend on speed 7 for 30 seconds and you’re done!
– Makes quite a big serve, will easily feed a family of 4 as a side with any other steamed veggies and your choice of meat
If you don’t have a Thermomix you could easily make this by cooking the cauliflower in a saucepan with above ingredients for 20 mins and placing in a blender or food processor. If dairy is in your diet you could also add in some tasty cheese and use milk instead of coconut cream!
