Let me start off by saying THIS IS THE MOST AMAZING HEALTHY BREAKFAST (OR DESSERT) YOU ARE EVER GOING TO EAT!!
One of my friends has been diagnosed with Coeliac recently, and her Mum has just found out she has IBS. Obviously, 2 terrible things to have to deal with…but also on the positive side, a good thing for me because they are finding all of these new, healthy recipes!
Nat knows I have a huuuge sweet tooth, so when I went to visit last week she made me try her newest creation. Let me tell you…it was like a party in my mouth. Smooth like cream, sweet like ice cream – I died and went to health food heaven. I asked her how she made it & came home to do a little research myself. It turns out this dish is actually Vegan friendly too.
So…all you need is a can of Coconut Cream (not the light version or it won’t whip), a dash of natural maple suryp, some Stevia if you want to add it in, chia seeds, a mixer and your choice of fruit and nuts!
The day before you want to eat it:
Keep the coconut cream in the fridge for a few hours
Pour into a bowl and whip for a few minutes
Add in a dash of maple suryp and a teaspoon of stevia. Whip again for a few minutes.
Add a tablespoon or 2 of chia seeds and mix them through
The next morning ‘TADAAA!’ you now have fluffy, delicious, healthy cream ready to add to your oats, berries and nuts!
THERMOMIX version: Once the cream has chilled, add the coconut cream to the mixing bowl. Insert the butterfly and slowly increas to speed 3.5 and whip for 1 minute. Add any extra ingredients and whip again for 20 seconds on speed 3.5
I could actually eat this every meal of every day and not get sick of it…it’s amazing!
