Smoothie bowls are available at every second cafe these days, so why not try making your own! This one is packed with nutrients from the bananas, spinach and chia seeds…but don’t forget that all fruit contains fructose which is still sugar, so enjoy your smoothie bowls but make sure you are adding in some greens, protein and healthy fats (spinach, chia seeds or protein powder and nuts) to even out your blood sugar and insulin levels

  • 1 frozen banana
  • 1 shot espresso coffee (or instant coffee)
  • Big handful of spinach
  • 1 tablespoon chia seeds
  • 1 scoop vanilla protein powder
  • 1 cup almond milk
  • Ice
  • Toppings of your choice (I used half a gluten free coconut weetbix, cashews, almonds, pepitas and blueberries

Add all ingredients to a blender or Thermomix and blend until smooth. I do 45 seconds on speed 10 in the thermo.
Pour into a bowl and use your favourite toppings!
