Yesssss pancakes with only 3 ingredients!!!!??
AND only 3 steps???!
SO easy, SO yummy!!
1 banana, peeled
3 eggs
1 tblspn chia seeds

Put banana, eggs and chia seeds into a blender/nutri-bullet/thermomix
Blast/blend/mix until banana and eggs are mixed into a smooth texture
Pour into a fry-pan on medium heat until bubbled on one side (about 3 minutes). Flip and cook on the other side for a further 2 minutes
You can top with whatever flavours you like! For these ones I put a teaspoon of jalna green yoghurt between every second layer, topped with the greek yoghurt and a berry compote I made in 10 minutes on the stove top with frozen mixed berries, 1/4 cup of water, a tablespoon of pure maple suryp and a tablespoon of chia seeds cooked on high heat until berry mixture reduces and becomes thicker
Try Mayvers cacao hazlenut spread for a nutella-like flavour with some strawberries or even chopped banana, mango and dessicated coconut for a nice summery flavour!
I also like to top with a small serve of nuts for extra omega 3 benefits
– Chia seeds are very high in anti-oxidants. But what does that mean??
Well, to break it down…there are free radicals in our body that cause inflammation and age our skin. Oxygen in the body splits into single atoms with unpaired electrons. Electrons like to live in pairs, so these atoms (called free radicals) travel the body to seek out other electrons so they can become a pair. It’s the worst type of love story, because this causes damage to our cells, proteins and DNA with many side effects such as our skin aging early, brain fog, hormonal imbalances, Alzheimer’s, Cancer etc.
Antioxidants neutralise these free radicals and stop them from causing you damage!
